Fruit and Nut Granola


  • 4 whole oats
  • 3/4 cup honey
  • 1/2 cup coconut oil
  • 3/4 cup brown sugar
  • 1 cup sunflower seeds
  • 1/2 freshly grated nutmeg nut
  • 2 cups raw pecans
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup sliced almonds
  • 2 cups various chopped dried fruit

In a glass mixing cup, mix together oil and honey. Add the brown sugar and stir until the brown sugar has dissolved. Combine oats, sunflower seeds, raw pecans, nutmeg, cinnamon, and salt in a very large mixing bowl. Pour the liquid mixture over the oat mixture and stir until all of the oats have been coated slightly in oil. Line a sided sheet tray with parchment paper or aluminum foil. Pour the oat mixture into an even layer in the tray and place in a pre-heated 250 degrees for 45 minutes to 1 hour and 15 minutes. Stir the granola ever 15-20 minutes to insure even toasting. When the granola is a nice toasty brown color, remove from the oven and pour the hot granola into a very large mixing bowl. Add chopped fruit and sliced almonds. Let cool to room temperature and then store in a lidded container for up to 7 days. You can also freeze in freezer bags for up to 4 months. Enjoy with milk, greek yogurt, ice cream, or by itself by the handful!
